Chicken stock

Hey y'all!

Got some goodies at the farmers market and then decided to spend a few hours making some chicken stock. Is it weird that I am young(ish) and single and can do anything I please and yet I want to spend Saturday making chicken stock? Yes. Yes, it is. I fear I may be a loser. Oh well. At least I am a happy loser with a bunch of chicken stock!

Easy to make stock, if you haven't done it before - save your chicken bits/carcass and veggie peelings in the freezer until you are ready. Then throw them in a pot and simmer away for a few hours. Voila! Chicken stock! To this batch I added red onion, chanterelle bits, thyme, cilantro, garlic, dried peppers, and half an apple. Random.

Here was the final product after simmering for about 3 hours - a container of chicken pieces and two containers of stock. Coming up...I'm gonna make my favorite soup! It's the best weight loss food ever, in case you are interested in these things...

Have a fabulous Sunday!

  1. I can't tell you how jealous I am that you can still go to a Farmers Market. I live in NJ and not only are the Farmers Markets few and far between in the summer, but now they are non existent.

  2. Hi Dan, really? No farmers markets in the fall? That sucks! :(

  3. I love weekends at home in the kitchen. :)

  4. Hi Carrie! It's fun, huh? Plus then you have the satisfaction of a good meal or a few good meals! :)

  5. Yum Yum! Don't forget the apple cider vinegar (just a wee splash) to help pull the minerals out of those chicken bones. Sorry, can't help pestering, I'm a mom...

    Looking forward to your soup!!

  6. Hi Tara, Oh I haven't heard of that! What a great tip!!! Thank you!

Spicy soup posting coming up! :)
