Salmon patties

I decided to make some salmon patties for dinner as I had a can of salmon on hand.

Ingredients:
Small can wild salmon
1 egg
coconut flakes
cumin
2 tblsp diced chiles in vinegar

Super easy! I just mixed all the ingredients together, let it sit in the fridge for an hour or so, then fried up little patties in coconut oil.

To go along with the patties, I wanted a salsa of some sort. I thought a mango salsa would be awesome, and I had half a peach so hey- mango...peach...same thing right? Well, the peach was a white peach and super sweet so it wasn't the best. But it was still good! I made a peach and avocado salsa and put it atop the salmon with a salad alongside. The serrano I added to the salsa was SUPER hot. It's funny how sometimes you buy a bunch of peppers and one is crazy spicy and the others are milder.

  3. Mustard usually, sometimes organic salsa from Amy's or TJ's, sometimes just a bit of pink or sea salt. When I have some, I will throw mustard seeds in to the mix- I love the look of those for some reason.


    What I need to make is a primal mustard sauce. We used to buy one at Legal Seafoods that was a mayo-mustard combo...so good. I need to experiment with primal mayo/mustard combo. My last attempt at mayo sucked (used all EVOO which was overpowering).

  4. Thanks Mark- that sounds interesting. Have you ever tried making mustard? That might be fun! Probably a huge waste of time though!

    I have never made mayo before, but I am thinking of trying it soon. I can't find it in the store without canola or soy oil. Anyone know of a brand that is made w/o weird oils?

  7. I am going to try your salmon patties tonight...how much cumin/coconut flakes do you use? I assume the flakes are used to bind them up a bit?

  8. Hey Mark!
    I used probably 2 tablespoons of coconut flakes, but I didn't measure, just added until it seemed to bind. And about 1/2 teaspoon of cumin. (Depends how much you like cumin.) It was one of those small cans of salmon.
    A bit of minced garlic and cilantro would probably be good mixed in there too!
