More sole

It's almost the weekend!

Here's another dish with the local dover sole. I really love that stuff. When I bought it at the store, I was pimping it to all the other customers at the fish counter. I got everyone to buy some, and the fishmonger guy was really pleased. haha! Which reminds me that the other day I was pimping dinosaur kale at the farmers market. I guess I'm a pretty damn good pimp! :)

So here is the tasty dinner I made. Once again, simple and easy as pie! (why do they say that? pie is not easy to make) I sauteed some beech mushrooms in butter with garlic, red pepper flakes, and rosemary, then tossed in some fresh spinach for just a second. Same seasonings on the dover sole, which I cooked in the same pan after removing the mushrooms and spinach. Probably a total of 8 minutes from start to finish, including going outside to steal rosemary off the neighbor's bush.

Squeeze of lemon juice over everything and dinner is served! (this is a salad plate piled high)
