Some evenings I get home from work/working out and I am thinking "holy cow, there is nothing in the refrigerator and I am sooo hungry!" Last night was one of those nights.
Searched around...found zucchini, ground bison, basil. Decided to make pesto and cook up the bison and zucchini in a pan. It was delicious! A few olives and cherry tomatoes for some excitement.
I even made enough for lunch leftovers. Yay!
Sorry about the obsession with bison lately. I promise next week I will move on to chicken or fish or something.
