Skirt steak with guacamole

Hi all!

This weekend I was craving some fat so I made a meal of marinated organic grass-fed skirt steak with guacamole. Yes, I ate almost 1/2 lb of steak and a small avocado and I liked it! (this was after fasting all day but still quite a big meal - I didn't feel overly full at all though)

I marinated the steak in chile powder, cumin, olive oil, garlic, lime juice, champagne vinegar and salt for several hours. I was too lazy to fire up the grill so I just threw it in a hot pan on the stove. I also made some guacamole with a small avocado, chopped jalapeno, lime juice, cilantro and salt.

It was sooooooo good! Sometimes you just crave a hunk of meat, right? :)

Enjoy the day today!

  1. Who doesn't love beef. I have a flank skirt marinating right now for dinner tomorrow. And who doesn't love cilantro; that must be my favorite herb. Your dinner looks great. I can almost taste the guac also.

  2. Hi Andy! Thanks for your comment. I love meat. YUM! Flank and skirt are probably my favorite cuts of beef and bison. So flavorful! And I love cilantro, probably too much. I hope cilantro is good for you, since I eat it almost every day! haha!

    Have a great day!
