Halloween and squash

I love Halloween! Dressing up is so fun and I especially like seeing everyone's costumes at this wild party we go to every year. Here was a funny one from last year!!!


Last year I was a beer girl (appropriate for my German heritage haha) - this year I haven't quite decided...any ideas?


In honor of upcoming Halloween, here is a yummy pumpkin recipe. Well, OK... butternut squash. A very simple recipe!

Dice up the butternut squash or whatever squash you like best. I have to say that this is definitely the hardest part of the recipe, especially if you peel it. What a pain! You need a big sharp knife and strong wrists.

Once you have your squash cut into cubes or slices, throw it on a baking sheet and sprinkle with olive oil and salt. Bake at 400 for 15-20 minutes until the squash pieces are softened and golden. Just before it is done you can toss in some chopped garlic and rosemary for extra yumminess. Or instead of rosemary, try adding a dash of cumin, and fresh cilantro on top with a squeeze of lime. YUM!

This is a great side dish or I even add it to salads. It is a wonderful thing to have in the fridge for making lunches, or eating with leftover meats. It's one of my staples in the fall months.

  2. I hate peeling winter squash too! I find it's easier to peel if you (gasp) microwave it just a little bit first, enough to soften the skin a little without really cooking the flesh through. Or another thing I like it to cut an acorn squash in half and scoop out the seeds (don't bother to peel it). Roast it cut side down for a bit, then flip it over and stuff the cavity with some kind of meaty filling and bake until it's done. Mmm.

  4. Beer girl was a good idea. I saw a girl dressed up as St. Pauli's Girl one year. I thought that was creative.

    It seems that a good deal of girls just go to the party store and find the skimpiest thing they have in there and call that their costume. No effort involved. Not that I'm really complaining about it though, lol.

    No idea what I am going to be.

    I used to scoff at the skimpy costumed girls, but now I somewhat embrace the sluttiness of Halloween. I think it was when I started going to these parties where the men dressed even skimpier than the women! :)

  6. Wie geht es Ihnen, Yummy? Funny my wife and I met at a Halloween party. What did it for her was my cow costume, complete with rubber udders. The women couldn't keep their hands off of them. Anyway, we actually ended up getting married on Halloween many years ago. Can't help you much on the squash input. One of my mainstays is to julienne yellow and green ones and saute them in coconut oil.

  8. Yummy, if I can scan a picture of that cow costume, maybe I'll post it on my site. It's a howl. Anyway, we're heading into Boston this weekend for some quality time. Nice hotel, then a brunch-cruise in Boston Harbor Sunday morning.
